The flavor was great but the texture and color left something to be desired. It takes green beans so long to soften up (WC doesn't like them al dente) that the other veggies were just cooked to a frazzle. I really like the red cabbage and onion with that mustard/vinegar thing going on so next time I'll just have to do the green beans another way. It was an experiment and that's what being creative is all about--learning and taking some risks. It was just veggies, anyway.

I had some things in the fridge that I put together for side dish for dinner tonight. I got a slow cooker for Christmas, so that's what I'm using. It won't be done for four hours! I'll have to let you know later how it tastes. Here's the prep:

Ingredients:
Fresh green beans, trimmed and snapped
Yellow bell pepper, julienned
Red cabbage, cut into large chunks
Small onion, sliced
Fresh basil, cut into medium pieces

Sauce:
Dijon, 2T
Coarse ground mustard, 1T
Champagne vinegar, 1/4 cup
Fresh lime juice, 1/2 lime
Bit of sugar (I used Splenda to keep it lo-cal)
Water, 1/2 cup

Olive oil drizzled on top of layers, 3T or so
Kosher salt & ground pepper to taste.

I layered all the veggies in the crockpot and then poured the sauce over it and set it on high for four hours.

I don't know how it's going to turn out, but the sauce was nice when I tasted it...nice and tangy!

Of course I took pix!!!!
